In the Heini's tradition of adding new and exciting cheeses to the market place we are proud to introduce the first sheep's milk cheese made using Yogurt Cultures. Our "Sheep Milk Yogurt Cultured Cheese" is a creation using the art of making Spanish style Manchego but using yogurt cultures in place of traditional cheese cultures used in making Manchego, thus the name "YoChego". Hand crafted in small batches, approximately 100 lbs., and cured in cave like conditions special attention is given to the cheese daily to assure that the natural cheese fermentation process is optimal to create this uniquely wonderful cheese. Because yogurt cultures are used, this cheese has the added benefit of live active yogurt cultures including Streptococcus thermophilus, Lactobacillus bulgaricus, Lactobacillus lactis, Lactobacillus acidophilus, Lactobacillus casei and bifidobacteria.
